Ingredients below

½ red onion
2 tbsp olive oil
1 clove of garlic
Chili and ginger

1 tsp cumin powder
1 tsp ground coriander
1 tbsp curry powder
ground paprika
1 can - 400g tin chopped tomatoes
1 can 400g tin coconut milk
1 g x 400g tin of chickpeas drained and rinsed
1 tsp salt
½ tsp ground black pepper
small bunch of coriander
zest of ½ lime and juice of ½ lime. #dinglepeninsula #foodindingle #inchbeach

Give the humble sprout a break -- I tried out this recipe recently. It is good . You might consider this one.

This is one that can be used with any firm cooked vegetables is "Bussels" aren't your thing

4 slices thick-cut bacon, chopped
1 small onion, chopped
3 tbsp. sherry vinegar ( Didnt have sherry so use wine vinegar )
2 tsp. Dijon mustard
4 tbsp. olive oil, divided
1 tsp maple syrup or honey
2 lb. small Brussels sprouts, trimmed and halved if large
Salt
DIRECTIONS
In medium pan, cook bacon/ rashers on medium, stirring occasionally, until crisp, 8 to 10 minutes.
Add onion and cook, covered, stirring occasionally, until tender, 8 to 10 minutes.
Add vinegar and mustard and cook, for approx 1 minute. Remove from heat and whisk in maple syrup and 2 tablespoons oil.
In large pan, bring ½ cup water to a simmer. Add ½ teaspoon salt and Brussels sprouts and cook, covered, shaking pan often, until just barely tender, 4 to 5 minutes. Uncover and turn heat to high, then add 2 tablespoons olive oil and cook, tossing occasionally, until beginning to turn golden brown, 2 to 3 minutes; remove from heat and toss with bacon vinaigrette
