Ulrich Hutch talks also about worldwide foraging. He mentions in chef networks that foraging has undergone a genuine uptake. It is almost as if we are getting back to our basic place in nature. We enjoy being involved with the collection of wild food. It allows us to be one with nature and work for our food. This is the real thing. You might say it is a good workout. Foraging simulates our senses and self-awareness. We truly understand why we search for wild mushrooms on a wet hillside or why we pick dulse at low water tide. Our satisfaction is total especially when we cook these items back in the kitchen.
